Description
The Valpolicella Ripasso of the Marco Conati winery is a well-made red wine, which shows its 10 years well. It comes from Corvina and Corvinone vines for 60%, Rondinella for 30% and a mix of Croatina and Sangiovese for the remaining 10%.
Tasting Notes
Marco Conati's Valpolicella Ripasso is a ruby red wine with violet reflections, intense and persistent. Its opening is soft and decisive, which evolves into a balanced acidic freshness and marked structure, and closes on the notes of marasca cherry jam with a finish that slowly stretches towards the typical almond characteristics. It has aromas of red fruit, with a prevalence of cherry. The taste has further spices and a savory-bitter finish that recalls the mineral and bitter almond. Great balance in the mouth, elaborate and very elegant tannins complete the organoleptic range that makes this wine pleasant and intriguing, still full of energy despite its age.This Valpolicella Ripasso by Marco Conati is perfect to combine with well-structured dishes, but also with grilled red meat: pappardelle with wild boar sauce, grilled meat, aged hard cheeses.
Processing
The vinification of Marco Conati's Valpolicella Ripasso is carried out according to the ancient tradition. About 15 days of alcoholic fermentation in concrete tanks without temperature control, daily pumping over and delestages. Maturation and refinement take place in 350 L Slavonian oak barrels for at least 24 months.
The Cellar
The Conati farm is located in the heart of the Valpolicella Classica and has been producing wines since 1900: Amarone, Valpolicella and Recioto. The tradition of the company is now under the command of his son Marco who has increased the production of Valpolicella and Amarone and improved the quality of his products.
