Description
Col Vetoraz Extra Brut is a sparkling prosecco with a dry but velvety taste produced with 100% Glera grapes from the most favorably exposed hills of the suitable area of Valdobbiadene.
Tasting notes
In the Col Vetoraz Extra Brut glass it shows a fine and persistent bubble and a creamy froth . On the nose it releases floral aromas of rose and fruity aromas of white peach, apple and pear combined with hints of citrus , acacia and vine flowers. In the mouth it is dry but still velvety and round. Ideal as an aperitif in combination with shells and crustaceans.
Processing
Following the harvest which takes place in the second half of September, the grapes are vinified in white with a soft pressing. Subsequently the wine ferments at a controlled temperature and ages for 1-3 months. Finally the refermentation takes place according to the Charmat method .
