The Sauvignon Blanc from the Cloudy Bay winery is a dry white wine born in Marlborough, New Zealand. This wine is produced with pure Sauvignon Blanc grapes that grow on gravelly and sandy soils.
In the glass, Cloudy Bay Sauvignon Blanc has a bright straw yellow color. The nose opens with aromas of ripe grapefruit , makrut lime and passion fruit . In the mouth it expresses fruity notes and has a good freshness and a subtle minerality . A white with a persistent finish ideal to combine with fish carpaccio.
After the harvest, which takes place by hand in the evening, the must is cold decanted, then the racking and fermentation takes place. The latter takes place in stainless steel tanks, while only 4% ferments in French oak barriques. After which the wine ages for a few months on the lees. Finally, the wine is bottled in October 2020.
