    Description

    Pierre Paillard's Champagne Les Parcelles is born from the assembly of several plots located in the village of Bouzy.

    Tasting notes

    In the glass, Pierre Paillard's Champagne Les Parcelles gives the nose notes of citrus and ripe fruit accompanied by mineral tones with touches of biochee, ginger and anise. In the mouth it is silky and balanced with a very fine bubble. The finish is persistent and elegant with flavors of lemon and toasted notes.

    Processing

    The vinification of this champagne is mainly elaborated from the 2015 vintage. Pierre Paillard's Champagne Les Parcelles ages on fine lees for four years.


    The cellar

    The history of the maison began in 1768, but only from 1946 did the maison market the champagne that bears its name. Today, under the command of the eighth generation, the Paillard maison produces Grand Cru wines. One of the peculiarities of the Pierre Paillard company is to still cultivate Pinot Fin: a variety from Burgundy characterized by a very low yield that allows a complete ripening of the grapes. Since 2013 the maison begins to vinify the different plots separately in order to enhance their individuality. Champagne characterized by great complexity and aromatic breadth, depth and persistence.
