Description

Pancetta tesa al Ginepr or Vecchio Varzi is obtained from the pancetta of heavy Italian pork. For the production, the Pancetta al juniper is salted for a few days, and then it is covered with juniper berries and pepper. Finally it is aged for about 40 days. Perfect for the preparation of “carbonara” pasta.

Its scent is spicy, intense and balanced.
