Description
The Orecchiette by Benedetto Cavalieri are produced using only durum wheat semolina. This format is famous thanks to its concave shape that allows you to enhance any type of sauce. One of the most typical dishes of Apulian cuisine, they are perfect to combine with turnip greens, but also go well with cherry tomatoes, broccoli and seafood.
The orecchiette by Benedetto Cavalieri, as well as all its formats, is renowned throughout the world for the rigorous selection of Italian durum grains that grow in land on the hills of Puglia and Basilicata. Wheat is grown without the use of chemical fertilizers.
Benedetto Cavalieri Orecchiette is very popular for its excellent grain flavor and delicious chewability.
Processing
Cavalieri products are obtained using a method defined as "delicate" which guarantees the complete preservation of the precious nutritional values of good Italian durum wheat. For the processing of his grains, Benedetto Cavalieri uses the most modern machines. Furthermore , in order to avoid pasta drying, a modern system called the “Cirillo Method” has been introduced, which consists in drying the pasta in dedicated rooms, equipped with a hot water radiator and a large fan.
The pasta factory
In 1918 Benedetto Cavalieri inaugurated the “Molino and Pastificio Benedetto Cavalieri” with the specific intention of producing top quality pasta. Since 2005 the Pastificio has been the teaching center of the University of Gastronomic Sciences of Pollenzo (Piedmont) frequented by students from 5 continents. For 4 generations the pasta factory has been carrying on the family tradition with passion and care, also achieving international recognition.
