Description
The Montefalco Sagrantino of the Le Cimate winery is a red wine that comes from a careful selection of Sagrantino grapes in purity. The vines grow on silt-clayey soils in the Montefalco area.
Tasting notes
In the glass, Le Cimate's Montefalco Sagrantino shows a bright red. The nose is rich in fruity notes such as black currant embellished with aromas of licorice and officinal herbs. It also has a good persistence. Ideal in combination with game dishes, veal and braised meats.
Processing
After a careful selection, the grapes are harvested, de-stemmed and subsequently pressed. Subsequently, a maceration on the skins takes place for 25 days. Finally, Montefalco Sagrantino Le Cimate ages in different woods (French barriques, Slavonian oak, Austrian oak) for 24 months. After bottling, it matures further before being put on the market.

Le Cimate was born in 2011 in the city of Montefalco in Umbria. With passion and dedication Paolo Bortoloni has decided to follow in his grandfather's footsteps and give life to this winery that benefits from the most innovative technologies. The range is wide and the wines do not derive only from grapes typical of the Umbrian territory. The name of the winery derives from the hilly area where it is located.
