The Merlot Maurus of the Vie di Romans winery is a red wine that comes from 100% Merlot vines, in the Isonzo Rive Alte area. A wine capable of offering a long aging potential. This red is born on silty and reddish soils, with a high presence of iron oxides.
In the glass, the Maurus di Vie di Romans has an intense ruby red color, the nose offers fruity scents reminiscent of dark plums and ripe berries. It also gives notes that recall sweet spices and slightly vegetal nuances. The taste is soft and warm with excellent persistence. Excellent to combine with second courses of red meat, game and aged cheeses.
After the grapes are harvested manually, they are left to macerate for 22 days and then subjected to punching down and delestage. Fermentation lasts 10 days and takes place in stainless steel vats. The Maurus di Vie di Romans rests for 18 months in barriue and another 8 months in steel. Finally, a further refinement takes place in the bottle for 15 months.
