Description
The Sauvignon Blanc from the Livon winery is a white wine produced with grapes from the vineyard of the same name, located in the Udine municipality of Dolegna del Collio.
Tasting notes
In the glass, Livon's Sauvignon Blanc has a straw yellow color with greenish reflections. The nose releases intense wild aromas reminiscent of green pepper , sage , peach and tomato leaves . The taste is full and dry characterized by a long persistence . Perfect to accompany all the first courses of vegetarian cuisine, it is ideal in combination with fish and shellfish.
Processing
During the harvest, the grapes are harvested manually, then cold maceration takes place for 8 hours . Then the must is cleaned and decanted. Fermentation takes place in steel tanks at a controlled temperature . The product obtained from fermentation matures in the same containers for 8 months , always at a constant temperature. after these 8 months the Livon Sauvignon Blanc is blended and bottled . Finally it matures in the bottle before being put on the market.
The cellar
The Livon company was born in 1964 from the passion and love of Dorino Livon for its territory. Today Livon is led by the third generation of the family with two separate cellars, one for the vinification of red grapes and the other for white ones. Recently the winery has become a set of several companies that collaborate to produce high quality wines always keeping in mind the love for the Friulian territory.
