The cellar
Pommery is the famous maison producing one of the most famous Champagnes in the world . The maison was founded during the second half of the 19th century by Alexandre Louis Pommery and Narcise Greno founded the maison. Subsequently, after Louis's death, his part of the company passes to his wife, and she will be the protagonist in the history of this champagne. The widow ordered her chef de cave to reduce the amount of sugar in the demi-sec, a trick. This proved to be a brilliant intuition and marked a turning point in the history of French bubbles. The Chardonnay, Pinot Noir and Pinot and Pinot Meunier grapes are harvested later than the other houses, in order to increase the sugar level without having to add any later. The care of the terroir, the selection of the grapes, the work in the cellar, the patience and the control of the various stages of aging are the guarantee of quality of Pommery champagnes.
