Tasting notes
The Ladoix Blanc Clos Royer from the Michael Mallard winery releases notes of quince, apricot and acacia on the nose. In the mouth it is fresh, full and round with a fruity and floral finish complemented by aromatic notes.
Processing
Following the harvest, a selection of the harvested grapes takes place. Subsequently the grapes are gently pressed in order to obtain a high quality must. Then the clarification by gravity takes place: the alcoholic fermentation takes place through indigenous yeasts in oak barrels from the Allier and Vosges forests. Finally the Ladoix Blanc Le Clos Royer ages for about twelve months in pièces bourguignonnes (40% new wood).
