Description

KiNoBi is a Gin handcrafted by the Kyoto Distillery. It is inspired by the Japanese tradition in fact its name means "beauty of the seasons" as for its production only fresh botanicals from Japan are used, available in different seasons of the year. The ingredients used for KiNoBi Gin are: citrus fruits , flowers , leaves , spices and fruit . A distillate that is making itself known all over the world.

Tasting notes

KiNoBi releases enveloping but delicate aromas reminiscent of juniper , citrus fruits and balsamic herbs . In the mouth it is dry and fresh with almost saline hints . It closes with a spicy finish given by the ginger . To be enjoyed straight or with ice.

Processing

Its distillation takes place with a base of rice spirit and the infusion of botanicals divided into 6 groups : Base ( juniper, iris, Hinoki wood) , Citrus ( yellow Yuzu, Lemon ), Herbs ( Sansho green pepper, Kinome sprouts ) , Spices ( ginger ), Flowers and Fruits ( bamboo and sisho leaves ), Tea ( Gyokuro green tea ). Each of these 6 groups is distilled separately in order to obtain 6 different gins. then the 6 bases are mixed with pure water and left to rest for a week . Finally, the blending of the bases that give rise to KiNoBi Gin takes place.

The Distillery

Kyoto Distilley is the first Japanese distillery that entirely dedicates its production to gins, it was founded in 2016 with the aim of producing one of the best gins using only botanicals of local origin.
