Dandelion Hautes Côtes Nature is a red wine produced from 100% Pinot Noir grapes. For the creation of this wine, a mini sample blend was initially prepared from several barrels in order to mitigate any possible difference.

The maceration of the skins takes place in concrete tanks for 20 days , followed by 3 rounds of "pigéage à pied". Finally, Dandelion's Hautes Côtes Nature ages in old barrels . The label is produced with paper from an old paper mill and is made up of cotton, linen, hemp and bluet flowers. All the writings are hand drawn and the labels applied by hand.

    The cellar

The company founded by Morgane Seuillot and her boyfriend Christian Knott produces labels vinified in a natural way without the addition of sulphites or additives, with great care in the vineyard. the Domaine is located in the Mavilly-Mandelot village surrounded by woods and meadows. The harvest takes place a month later than in the rest of Burgundy, The grapes are pressed in an old vertical screw press and aged in neutral oak. The production is only of two wines full of personality and pure.
