Tasting notes

The MonteRossa cabochon is compact and dense on the nose and releases hints of kiwi and exotic fruits that combine with floral notes of mimosa and broom and aromas of ginger . In the mouth the complex aromas perceived on the nose are confirmed. A Franciacorta of great depth , ample and creamy with a finish of lime and capers. ideal to uncork on special occasions paired with crustaceans, molluscs and fish-based dishes.

Processing

After the harvest, the grapes are softly pressed and each cru is vinified in purity . Subsequently, the fermentation takes place in oak barrels and finally the MonteRossa Cabochon ages for over 36 months.

The cellar

Monte Rossa is one of the historic wineries of Franciacorta, founded in 1972 by Paolo Rabotti. Monte Rossa was the first company to abandon the path of still wines by focusing on the pursuit of excellence in Franciacorta and investing in technology and experimentation. Great Cuveè rich in structure and complexity, each bubble a story of love and dedication. MonteRossa labels have an unmistakable style of the highest quality.
