Description
The Cuvée Vendémiaire by Doyard is a Champagne that comes from a blend of Chardonnay grapes of 3 vintages: 2010,2011,2012.
Tasting notes
This Cuvée Vendémiaire from Doyard opens on the nose with spicy notes of thyme , ripe fruit and dried fruit with a woody touch . On the palate it has a good silky acidity . An elegant and characterful champagne with a minerality and flavor typical of the craie terroirs . On the finish it has a long persistence .
Processing
The vinification of Doyard Cuvée Vendémiaire takes place in oak barrels for 40%, then it is left to rest on its lees for at least 5 years. The malolactic fermentation, on the other hand, takes place only partially, at 20%. Finally this champagne matures on lees for 54 months.
The cellar
The Doyard estate is born in Vertus , in a village on the Côte des Blancs. The founder Maurice Doyard was a symbolic figure in all Champagne, in fact Maurice leader of the growers movement , he was also one of the founding members of the Comitè Interprofessionel des Vins de Champagne . The estate boasts over ten hectares of vineyards divided into prestigious villages.
