Tasting notes
Conati's Amarone Valpolicella 2015 is presented in a ruby red glass with violet reflections. The nose is enveloping, with aromas of red fruit, cherry jam, forest fruit, combined with spices such as cocoa, cinnamon, black pepper. In the mouth it has great velvet and softness with a very persistent closure. Perfect to combine with structured and demanding dishes: red meats, braised and stewed meats, furred game, very aged cheeses.
Processing
After the grapes are harvested, the destemming takes place, subsequently the wine ferments for about 60 days in concrete tanks without temperature control with pumping over and delestages. Finally, Amarone della Valpolicella 2015 ages and ages for at least 36 months in Slavonian oak barrels.
The Cellar
The Conati farm is located in the heart of the Valpolicella Classica and has been producing wines since 1900: Amarone, Valpolicella and Recioto. The tradition of the company is now under the command of his son Marco who has increased the production of Valpolicella and Amarone and improved the quality of his products. The cellar is located under the house, in small cells where woods and tanks have been created according to the spaces.
